Can you believe Fall is just around the corner? Summer is coming to an end and after spending summer evenings under the Willow Tree, it’s now time to start thinking fire pits and outdoor heaters, sitting around the table with friends and some wonderful fall comfort food. Recently, I had the privilege/blessing to contribute to StreetScape Magazine for their September/October issue. I was asked to do something with apples and pumpkins.
I chose a menu of some fall favorites including a wonderful roasted pork tenderloin as the main course, I will share later, but one of the dishes I chose was a pumpkin casserole. Now y’all know I’m from the deep south. We don’t do a lot of cooking in the deep south with pumpkins. And most especially if you’re going to make a festive fall casserole it’s always going to be sweet potato casserole or sweet potato pies, but never pumpkin. I was skeptical it was going to be yummy, however it went along with the apple and pumpkin theme, so I went with it.
Y’all……it was really yummy! Everyone loved it! And I didn’t even add a crunchy top to it or marshmallows. I served it just as the recipe called. So, I want to share it with you. This will be a great side dish for your Thanksgiving meal and I bet you there won’t be any leftovers. We truly had a great evening and of course I was so thrilled to have the blessing of doing another article for the magazine, but the real blessing is sitting around my beautiful table handcrafted by the man I love with all of the people we love most! Pumpkin Casserole
2 cups pumpkin puree 1 cup evaporated milk
1 cup white sugar 1/2 cup self-rising flour
2 eggs 1 teaspoon vanilla extract
1/2 cup butter 2 pinches ground cinnamon
Directions
Preheat oven to 350 degrees.
Combine the pumpkin, evaporated milk, sugar, flour, eggs, vanilla, melted butter and ground cinnamon to taste. Spoon into a casserole dish.
Bake at 350 degrees for 1 hour.
