I’m not sure if it’s my Southern upbringing, but I always feel when I fix a meal, we MUST have something green. Usually, that go to dish for me is green beans. I love them. I love them fresh or frozen or even in the can and of course y’all know it’s all in the way you cook them. With Thanksgiving approaching, I thought I would share with you the recipe I use. I’m not sure who thought creating the green bean casserole was a great idea, but I personally can’t stand it and once you spoon into the casserole, well let’s just say it isn’t the most appetizing dish you’ve ever seen! I just offended all the green bean casserole lovers around the world. Try this recipe instead. It’s simple, it’s yummy and your guests will be asking you for the recipe! Here’s how I fix them. Please keep in mind, I don’t have an exact recipe for this as with a lot of the foods I cook, but I’ll do my best.
1 to 2 bags of whole frozen green beans (depending on how many you’re feeding)
1/4 cup give or take of bread crumbs
1/4 cup give or take of parmesan cheese
Sea Salt
Fresh Ground Black Pepper
Garlic Powder
In an iron skillet, or a regular skillet pour in just enough olive oil to cover the bottom of the pan. Begin heating the oil and once it begins to heat well add your green beans. Toss the green beans around with tongs until most are covered in the olive oil. Let them cook until they begin to get a bit soft. Add the sea salt, black pepper and garlic powder. This is a matter of preference, as to how flavorful you want them. Let them cook a bit more and then add your bread crumbs and parmesan cheese. Toss the beans around in the skillet until most are covered with the bread crumbs and parmesan cheese. Let them cook until they’re soft and serve.
This is really a simple side dish that makes a beautiful presentation. Serve them right in your iron skillet. If you have some bacon grease on hand, you can use that instead of the olive oil. I have to admit, they do taste better with the bacon grease, but they are good either way. You can also use fresh green beans. You will just need to blanch them first for a bit. Hope y’all enjoy!!
