Chipotle Sweet Potato Fries

Happy Monday, everyone! Let’s talk sweet potatoes. My husband has decided he would like to drop some weight, so I’m doing a bit more meal planning than usual. I love all vegetables, which makes it easy for me to eat them in all forms. Including just baking a sweet potato and eating it plain without the additives. My husband not so much, so I have to come up with some different ideas to get him to eat them and enjoy them.

Last evening for our Sunday night supper, I decided we would have a grilled chicken breast and grilled shrimp skewers. For my side dishes, I made some green peas that I cooked in the rendering of one slice of bacon, (cause let’s face it, those need some flavor), and chipotle sweet potato fries. Wait, what? Yes, sweet and savory with a little bit of heat. The perfect marriage in flavoring. And my husband loved them! Score!

Whitagram-ImageThese potatoes make a great side dish, but they are also excellent as an appetizer with a dipping sauce, and the perfect without the guilt. If you’re on a healthy eating journey, I will encourage you to try these. My husband has requested we have them for every meal! I fact he wants the exact menu we had last night for every meal! Give them a try! I think you will be pleasantly surprised at how yummy they are!

Chipotle Sweet Potato Fries

Preheat oven to 450 degrees. Line a baking pan with parchment paper. Peel two sweet potatoes and slice them to resemble french fries.

Add them to a bowl and then add:

2 to 3 tablespoons of olive oil

1/2 tsp. chipotle chili powder

1 tsp. smoked paprika

sea salt

Use your hand to cover the potatoes with the spices and add them to your prepared pan. Bake for 15 minutes and remove the pan to turn the potatoes and bake for another 10 minutes. Easy peasy!
